- 4 chicken breast fillets, without skin
- Salt and freshly ground black pepper
- 2 tablespoons olive oil
- 3 garlic cloves, finely chopped
- 1/2 cup chicken broth
- Juice of 1 lemon
- 2 tablespoons cold butter, cut into pieces
- Fresh parsley, chopped (for garnish)
Directions:
-
Prepare the chicken: Season the chicken breast fillets with salt and pepper. In a large skillet, heat the olive oil over medium-high heat.
-
Brown the chicken: Add the chicken breasts and brown for 4-5 minutes on each side, or until nicely browned and almost cooked through. Remove from the pan and set aside.
-
Prepare the sauce: In the same pan, fry the garlic briefly until fragrant. Then add the chicken stock and lemon juice. Increase the heat and allow the liquid to reduce slightly.
