Chicken & Avocado Bowl

Ingredients:
- 200g chicken breast
- 1 medium avocado
- 100 g mixed leaf salad (e.g. rocket, spinach, lamb's lettuce)
- 100 g cherry tomatoes
- 50g cucumber
- 30g feta cheese
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- salt and pepper
- Optional: nuts or seeds for added texture
Directions:

Prepare the chicken breast: Season the chicken breast with salt and pepper. Heat 1 tablespoon of olive oil in a pan and fry the chicken breast for 3-4 minutes on both sides until cooked through. Then remove from the heat and let cool, then cut into strips.

Prepare the vegetables: Halve the cherry tomatoes, slice the cucumber and dice the avocado. Crumble the feta cheese.

Assemble the salad: Place the leaf lettuce in a large bowl as a base. Spread the prepared vegetables, chicken strips and feta cheese on top.

Prepare the dressing: In a small bowl, mix the remaining olive oil with balsamic vinegar. Season with salt and pepper.

Serve: Pour the dressing over the bowl and mix everything well. Optionally, sprinkle a few nuts or seeds over the salad to add a crunchy texture.
